Ingredients
- 225g mushrooms
- 2 cloves of garlic, minced
- 2 tablespoons reduced-fat cream cheese
- 1 teaspoon dried mixed herbs, such as basil or parsley
- salt & pepper to taste
- Low-calorie cooking spray
- 2 slices of sourdough toast
- 2 poached eggs
Directions
- Add a frying pan sprayed with low calorie cooking spray over medium heat.
- Add the mushrooms and stir until they soften, moving them around the pan throughout to avoid sticking.
- Add the garlic, herbs, salt & pepper and stir well.
- Turn the heat down to low, then add the cream cheese and mix well. If the mushrooms look a little dry, add more cream cheese.
- Serve on your sourdough toast, topped with a poached egg alongside a chilled glass of Barefoot Pinot Grigio.
