Ingredients
- 450g Boiled Potatoes
- 30g Breadcrumbs
- 1 Tbsp Corn Flour
- 1 Tsp Salt
- 1 Tsp Ginger paste
- 1 Green chilli finely chopped
- 1 Tablespoon Lemon Juice
- 1/2 Tsp Red Chilli Powder
- 1/3 Tsp Turmeric Powder
- 1/4 Tsp Cinnamon Powder
- 1/4 Tsp Clove Powder
- 20g Finely chopped fresh Coriander
- 30 g Red Onion Finely Chopped
- 6 Tbsps white Bread crumbs
- 100ml Sunflower Oil for shallow frying
- Green coriander and Mint Chutney
Directions
- Mash the potatoes ensuring there are no lumps.
- Add the finely chopped onions, chopped coriander, ginger paste, chopped chillies, salt, turmeric, chilli powder, cinnamon powder, clove powder and lemon juice . Also add 2 Tbsps breadcrumbs and 1 Tbsp corn flour.
- Mix all the ingredients together.
- Pinch 12 Golf sized balls of the mixture and shape them into rounds patties, Flatten them and coat them in the remaining bread crumbs.
- Place the prepared patties in the fridge for 30 minutes
- In a shallow pan heat the sunflower oil to 180 degrees C. 350 Degrees F
- Fry the round patties in the oil until golden brown on both sides.
- Drain them on kitchen paper and then repeat the process for the remaining patties.
- Transfer them to a serving dish and serve hot with the green coriander, mint chutney and a chilled glass of Barefoot Moscato.
